The Hairy Bikers’ pavlova recipe uses ripe summer time bananas, but you can test which makes it with stewed fruits in the winter months. An excellent make-ahead dessert that’s gluten-free, too.

  • 4 large free-range egg-whites
  • 225g/8oz caster sugar
  • teaspoon vanilla flavoring
  • 1 tablespoons of cornflour
  • 400ml/14fl oz double cream
  • 400g/14oz bananas, hulled, halved if large
  • 200g/7oz raspberries
  • 150g/5oz particularly
  • Cape gooseberries (optional)
  • 3 passion fruit (optional)
  • mint sprigs, to brighten
  • sifted icing sugar, to brighten


Preheat the oven to 150C/Fan 130F/Gas 2. Convey a 25cm/10in dinner plate on the sheet of baking parchment and draw around it.

Place the egg-whites inside a large, clean bowl and whisk by having an electric hands whisk until stiff although not dry. They’re ready when you are able turn the bowl upside lower with no eggs sliding out.

Progressively whisk within the sugar, a tablespoonful at any given time, whisking for any couple of seconds in between each addition. Adding the sugar gradually helps to develop volume within the meringue making it stiff and glossy. Finally, whisk within the vanilla flavoring and cornflour until well combined.

Dab a tiny bit of the meringue within the corners of a big, sturdy baking tray or sheet. Squeeze baking parchment, attracted side lower, around the baking sheet, while using meringue dabs to secure it towards the tray. You will be able to begin to see the circle with the paper.

Spoon the meringue in to the circle and shape with the rear of an amount spoon or rubber spatula to produce a large meringue nest, with soft peaks rising on every side. Devote the center from the oven and bake for one hour until very gently coloured and crisp around the outdoors. (When the meringue appears to become becoming too brown, lessen the temperature from the oven). Turn the oven off and then leave the meringue for any further hour.

Remove in the oven and then leave to awesome completely.

As much as 2 hrs before serving, carefully release the meringue in the baking parchment, utilizing a spatula if required, and put onto a sizable serving plate. Whip the cream until soft peaks form and spoon in to the center from the meringue. Top using the bananas, raspberries and particularly, and also the Cape gooseberries if using. The meringue base can be created as much as 8 hrs ahead of time, simply top with cream and fruit right before serving.
