Fresh herbs and seasoning trigger the sweetness from the butternut squash within this recipe. Let the oven work its magic.

Ingredients

  • 1 large or 2 small butternut squash, reduce quarters lengthways, seeds removed
  • essential olive oil, for drizzling
  • 2 tablespoons of butter
  • salt and freshly ground pepper
  • couple of sprigs fresh thyme, leaves only, plus couple of sprigs fresh thyme, left whole

Method

Preheat oven to 180C/350F/Gas 4.

Put the squash inside a roasting tin, cut-sides up.

Drizzle within the essential olive oil and us dot using the butter. Season, to taste, with salt and freshly ground pepper, then scatter within the thyme leaves and also the whole sprigs of thyme.

Roast within the oven for 45-50 minutes, or before the squash is tender and it has switched golden-brown in places.
