This past year when pondering a plant-based Thanksgiving entre my thoughts immediately visited: What can I really make and eat on Thanksgiving? And my Yams Chickpea Thanksgiving Wrap was the solution.

This season, I had been craving something a bit more festive, a bit more colorful, and a bit more comforting.

And So I made the simplest, creamy fall soup (ever) and offered it in roasted acorn squash “bowls.” It makes sense a creamy, decadent, nutrient-wealthy soup which will “wow” visitors and make you feel all cozy and warm inside.

Besides this being soup healthy and scrumptious, but it’s very simple to create, requiring just 10 fundamental ingredients you have in all probability on hands at this time, and merely 1 1/2 hrs to organize (including roasting acorn squash).
